Panheads are normally preferred for movie cameras or camcorders and they work fine for that. They have 3 different handles to adjust and when you're actually shooting, you normally only have to fiddle with one - the one that allows you to swivel the camera.
When using a camera you want to be able to lock on to your subject and make only one adjustment to keep you there. The ball head allows you to do that. You can tilt or swivel it and still only use one adjustment. Actually, once I have the ballhead's tension adjustment set properly, I don't have to use any adjustments. Just point the camera at your target and it stays there.
